Kazakhstan’s Quiet Vegetarian Revolution Starts in Almaty’s Kitchens

Vegetarianism remains a rare choice in Kazakhstan, where meat holds deep cultural significance. In cities like Almaty, however, small but steady changes are taking place. A growing number of restaurants now offer plant-based dishes, though challenges persist for those avoiding meat.

Kazakhstan’s traditional cuisine revolves around meat, with dishes like beshbarmak and manti rarely made without it. For many, rejecting meat can feel like rejecting heritage, making vegetarianism an unusual—and sometimes rebellious—lifestyle.

In Almaty, the country’s most cosmopolitan city, options are slowly expanding. The city’s expat community and access to fresh produce have helped. Govinda’s Vegetarian Café, one of the oldest meat-free restaurants, serves flavourful Indian dishes. Meanwhile, Martina, a long-time vegetarian from Öskemen, opened Bliss Blossoms in 2019—a fully vegan restaurant that has thrived since its launch. Elsewhere, progress is uneven. Some Almaty eateries now include 'healthy menus' with meat-free dishes, but chefs often lack experience in plant-based cooking. Mistakes happen, leaving vegetarians disappointed or accidentally served meat. In rural areas, meat-free meals remain almost nonexistent due to limited choices. A young American woman created the Facebook group Vegans & Vegetarians of Kazakhstan and Central Asia to share tips and reviews of vegetarian-friendly spots. While the group’s founders stay anonymous, it has become a useful resource for those navigating the country’s meat-heavy food scene.

Almaty leads Kazakhstan’s gradual shift toward more vegetarian options, though challenges remain. With a few fully meat-free restaurants and growing awareness, the movement is gaining ground. For now, though, traditional meat dishes still dominate most tables across the country.
